In a large pot over medium heat, melt butter. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Remove the chicken and strain the stock, discarding the solids. Add celery, carrots, bay leaves and thyme.

- Cook noodles,grease them with some garlic infused oil and set aside,cut scalion bulbs into quarters or slices nd chop the greens into diamonds, divide the thai bird chillies into two.
- For stock,boil the chicken carcas or bones for a few mins and drain the water and rinse the carcas to clean the dirt. Boil it in a heavy vessel along with the other ingredients for about half an hour till the stock reduces,simmer for a few mins and then strain through a muslin cloth.
- Now in a bowl place the noodles topped with scallions, thai bird chillies and pieces of chicken. Pour the stock over it. Serve hot & enjoy.
