  11. Take 2 tbsp Parsley
  12. Prepare 1 tsp Italian Seasoning
  13. Take 5 tsp Minced Garlic
  14. Take 2 tsp Salt
  15. Take 1/4 tsp Pepper
  16. Get 3 tbsp olive oil

Bring to the boil and then reduce to simmer. Check the soup every few minutes. Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and ½ teaspoon of the salt. Add the garlic, curry powder and thyme.

Instructions to make Vegetable Soup:
  1. Add olive oil to lg pot. Saute onions,carrots,and celery for 4 mins on medium heat.
  2. Add garlic,stir for 1 minute. Add broths.
  3. Add tomatoes, potatoes, parsley, Italian seasoning, salt and pepper. Bring those to a boil, then add green beans and zucchini. (For firmer zucchini,add last with the corn.)
  4. Cover and reduce heat to medium low to simmer for 25-30 minutes.
  5. Add corn and stir.Let simmer for 5 minutes. Done! (Let stand for at least 30 minutes and stir occasionally to let flavor soak in.)

Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and ½ teaspoon of the salt. Add the garlic, curry powder and thyme. Make the soup: Sauté the onion, carrot, leeks and celery until soft, fragrant and starting to turn golden brown. The more the vegetables caramelize at this stage, the more intensely flavored the soup will be. Season with salt, pepper and Creole seasoning.
