  3. Once chicken is cooked separate the meat into a bowl and put aside, stock can be made from the bones if you want but stock cubes work just as well. (I do have a chicken stock recipe if needed)
  4. To the veg mixture add tinned tomatoes and stick and bring to the boil then reduce to a simmer for 30mins until everything is nice and soft. Add chicken and cook for a further 5 mins
  5. Blend if you prefer or leave it chunky, serve with fresh crusty bread 🥖

I like to add fresh thyme and parsley. This soup contains the perfect combination of chicken, vegetables and rice. It's delicious and a meal in one pot. Add the noodles, vegetable stir-fry, spring onions, chilli and chicken. Season soup with Ranch dressing dip mix, crushed chillies, salt and pepper.
