Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Put the rice into a large bowl, cover with cold water and use your hands to wash the grains.
Instructions to make Jollof rice:
- Parboil the rice with salt and curry. Wash and set aside.
- In a pot heat up oil,add in chopped, onion, ginger and garlic paste,chopped scotch bonnets and fry for about 5mins.
- Add in some water,chicken stock,seasoning, curry,thyme,black pepper,white pepper,bay leave cover it and bring to boil.
- Add in your parboiled rice,cook on medium heat until water starts to thicken a bit.
- When done add in the scallion, cover it to steam and enjoy with coleslaw,fried chicken or peppered chicken are any thing of your choice
