Cover the pan with large plate or the lid of a large saucepan, and quickly turn it upside down to invert the omelette. Slide it back into the frying pan, crust-side up. In a large frying pan with a little cooking oil, cook the sweetcorn adding the chopped pepper and then the sweet potatoes. Beat the eggs together with the milk.

- Place all the sauce ingredients in a small saucepan and mix well. Check the flavour, add Salt if required depending on the Chicken Stock you use. *Note: Do not start heating yet.
